Purslane (Portulaca oleracea)

Purslane grows in summer. It's rich in omega-3, iron, and vitamin C.

You can eat it raw, cooked, or pickled.

It's highly mucilaginous, so should thicken soups and casseroles. Its mucilaginousness also makes it a useful soothing medicinal herb.

It belongs to the same family as miner's lettuce.
